做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热下鱼(yú ),煎(jiān )至微黄(huáng )。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可品尝。
