做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入(rù )少量清(qīng )水半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖(gài )焖。
