做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热(rè )锅,用姜块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫(jì )鱼(yú )和其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个(gè )半小时,下盐调味即可品尝。
