做(zuò )法(fǎ ):春笋(sǔn )切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
