做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝(háo )油(yóu )翻(fān )炒均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。 -
