做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山(shān )和薏米(mǐ )。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至(zhì )微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小时,下盐调味即可品(pǐn )尝。
