做法:春(chūn )笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
