做法:春笋切(qiē )成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩(yǎn )住春笋,盖上锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
