做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春(chūn )笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
