做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡(pào )软,拍裂一小块姜(jiāng ),热锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
