做(zuò )法:洗(xǐ )净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用(yòng )姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油六成热(rè )下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小火(huǒ )煲一个半小时(shí ),下盐调味即可品尝。
