做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁(zhī )时盖(gài )上锅盖焖(mèn )。
