做法:春笋切成(chéng )片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上锅(guō )盖大火(huǒ )煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
