做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍(pāi )裂一小块(kuài )姜(jiāng ),热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时(shí ),下盐调(diào )味即可品尝。
