做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和(hé )薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调味即(jí )可(kě )品尝。
