做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜、春笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
