做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
