做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖(gài )上锅盖焖。
