做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
