做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清水把陈(chén )皮泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六(liù )成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时,下(xià )盐调味即可品(pǐn )尝。 -
