做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡软(ruǎn ),拍裂一小(xiǎo )块(kuài )姜,热(rè )锅,用姜块(kuài )在锅上擦一遍,放两勺油,待油六成(chéng )热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时(shí ),下盐调味即可品尝。 -
