做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小(xiǎo )时,下盐调味即可品尝(cháng )。 -
