做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。 -
