做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火(huǒ )煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调(diào )味(wèi )即可品尝。
