做法:春笋切成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
