做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
