做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一(yī )小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待(dài )油六(liù )成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火(huǒ )煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味即可(kě )品尝。
