做法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切(qiē )成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
