做法:春(chūn )笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
