做(zuò )法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上锅(guō )盖焖(mèn )。
