做法:洗净宰好(hǎo )鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅(guō ),用姜块在锅上擦(cā )一遍,放(fàng )两勺油,待油(yóu )六成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。
