做法:洗净(jìng )宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其他材料(liào ),武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小(xiǎo )时,下(xià )盐调味即可品尝。
