做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋(sǔn ),盖(gài )上锅(guō )盖(gài )大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
