做法:春笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用清(qīng )水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
