做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖上锅盖焖。
